Or better say: 'Labor Day' Peach Pie (Upgraded). First of all, I really have to say, that I enjoyed the film 'Labor Day' (2013) very much. This film made my hard road to Germany much easier and brighter. About this unusual, warm story read later, and today - pie!
In the film there's a very simple peach pie recipe, I decided to make the pie more delicate and added meringue on top.
So, what we need:
For the Pie Crust:
1 full egg
200 g flour
few spoons cold water
150 g butter (or less)
dash of salt
For the Filling:
7 peaches or more (1,5-2 kg)
1 cup sugar
dash of cinnamon
tapioca, corn flour (optionally)
For Meringue:
5 egg white
1 cup sugar
Make a dough. All ingredients have to be cold. Relax and be gentle with your future pie crust:)
Meanwhile, our dough is in the fridge, peel peaches and cut it in pieces. Then add sugar, cinnamon to peaches, mix all ingredients well and leave it for a while.
There are two ways to continue. First is more like in the film: add some tapioca on the bottom of pie crust, then - peaches and cover the pie up. Tapioca or corn flour is to avoid wet crust. The first way is without meringue on top. No doubts it's super tasty, but believe me, that with meringue on top this pie can be even better.
Second method. Remove peach juice. If you afraid that your pie will be dry, no worries for that!
Fill the crust with peaches. Do not cover, of course:)
Preheat oven and bake for 25 minutes.

Prepare meringue. There's one little trick to get really thick and beautiful meringue, just add a dash of salt and few lemon drops in the bowl with eggs white. Start beating the whites on a low speed and only then increase.
Cover the pie and put it into the oven for 20-30 minutes, until the top is a bit brown.

This pie is perfect for a warm summer evening, it's delicious, easy to bake, it's not too sweet and it's very very light.
