Twin Peaks Cherry Pie!

Tadaam, taadam.. Do you hear the main music theme of Twin Peaks, when you see this picture?! Because I do! And what a beautiful, composer's name: Angelo Badalamenti:) 
Anyway..where was I..oh yes:) October came, it's getting colder and colder, so it's a perfect time to drink some wine, watch Twin Peaks and have a cozy evenings with friends and films.
Remember one of the biggest passions of adorable agent Cooper?! Right! Pies and coffee!
So, today we will make cherry pie from Twin Peaks. Foodies, walk with me;)

For the pie we need:

Pie crust:
2 cups plain flour 
200 g butter (+ 10 g to grease a baking dish)
1/2 tsp salt
1/2 cup of ice-cold water
2 tbsp milk (optionally)

Filling:
3 (or more;) cups pitted cherries
1 cup sugar
2 tbsp corn/potato flour
1 tsp vanilla sugar
zest of half a lemon

First we need to make a pastry. We're doing almost everything in the same way, like we did with Lemon Meringue Pie, but in this case we don't need an egg. Tip: add water in little portions, otherwise it will be really hard to mix everything to a good pastry. Put the pastry into a fridge for at least 40 minutes.


After chilling - take the pastry and cut 1/3 of it for the pie cover. 
Put the basic pastry into a greased baking dish, put some baking paper on it and add some chickpeas f.x. to avoid pastry growing. Then - bake the pie base for 15-20 minutes in preheated 200°oven. Later - just let it chill. And start making filling.

Khm, oh yes:) Let's go back to our pie!
Take cherries, put them into a large bowl, add sugar, vanilla sugar, lemon zest and corn flour. Mix all the ingredients really good and carefully.




Leave the filling for a while and make a cover for the pie (you remember that you still have your 1/3 of a pastry, don't you?:)



When everything's ready - fill the pie crust with cherries and cover it.
About milk: you can grease the pie cover with a milk, or for example use yolk for it. But it's not necessary, this step is very optional.


Hi there:)

Put the pie into an oven and bake it for ~40 minutes, until the cover get brown a bit.
Let it chill.


This pie is really tasty. With coffee and ice-cream it's just super delicious! Mmm..
